Temperature Gauge.

Being new to the 2.8 diesel ownership can anyone advise me. The temp gauge hovers around halfway whilst pottering but if I accelerate up to 60/70 or uphill then it goes up and into the red with warning chime if I back off the it will slowly cool down. There's no coolant loss but the coolant looks like gravy! I gather it's thermostat, radiator or coolant change, or all three? Any thoughts please?
